Larb is a staple dish of Thai food and originates from Lao cuisine. In general, it's minced meat mixed in some salad, herbs, lime juice, vegetables, mint, and fish sauce.

Overall, larb is compatible with the ketogenic diet. However, if you choose to serve it with some sticky rice on the side, it won't be low-carb anymore. So as long as you serve larb the keto-friendly way (for example with some cauliflower rice on the side), no harm will be done to your diet.

Ingredients and Variations

My recipe for the larb salad is slightly different from the original one, but that's how I've been making it for years now. Here's what you'll need to make this keto larb salad bowl:

  • Ground beef. This is the base ingredient for this keto Thai larb recipe. I prefer to use ground beef, but if you want, it's okay to substitute it with ground chicken, turkey, or pork.
  • Fish sauce. Larb won't taste as larb without fish sauce, so it's important to add it.
  • Lime juice. This is one of those ingredients that adds freshness to this meal.
  • Fresh mint. The original larb recipe calls for fresh mint, and I don't see any reasons not to add it.
  • Garlic. Either garlic powder or minced garlic works fine (but for more flavor it's best to go with minced garlic).
  • Sweetener. I usedLakanto Monkfruit sweetener, but any other kind is fine.

That's it! And well, of course, you'll also need to add some salt and pepper to your keto larb.

If you want, you can also throw in some chili flakes or cayenne pepper if you want some heat. And since the traditional recipe also includes cilantro, shallot, basil, and green onion, you can also add some if you wish.

Now, to assemble the keto larb salad bowl, pick your favorite low-carb vegetables. This time, I used the following additional ingredients: cucumbers, fresh mint, lettuce, lemon, and jalapeno. You can use the same ones (trust me, you'll end up with a delicious keto larb) or any other veggies that you like most.

How to Make Keto Larb Salad Bowl

There's nothing complicated in making the low-carb larb. Let me walk you through the main steps of the cooking process:

  1. Cook the meat. Just put your skillet over medium heat and stir fry the ground beef. There's no need to add any oil since this type of meat will release lots of fat.
  2. Add the other ingredients. Once the ground meat is fully cooked, add all other ingredients, and cook for a few more minutes.
  3. Assemble the keto larb salad bowl. Place the cooked larb in a bowl, and add all of your favorite ingredients: lettuce, cucumbers, lemon, etc. If you don't want to make a salad bowl, you can just place some of the keto larb in a lettuce leaf and wrap it up.

As simple as that, you'll have your low-carb larb ready in about 20 minutes.

Should Larb Be Served Warm or Cold?

It's totally up to you to choose whether to serve this keto larb warm to chilled. Personally, I prefer to serve it warm (I really like the contrast between warm meat and cold veggies in this larb salad bowl).

But serving the larb cold is also delicious. I like to serve it cold when I make the larb out ground chicken or turkey.

Storing Instructions

If you have any keto larb leftovers, you should store them in your refrigerator for up to 2-3 days. It is best to keep the larb in a separate container without assembling it as a salad bowl. This way, you'll be able to reheat it, and the veggies that you choose to serve the larb with will be fresh and crunchy.

Also, you can freeze this larb if you want to. Just place it in a food container or zipper bag and freeze it. You can keep it in your freezer for up to 2 months. Then when you choose to serve it, thaw it in your fridge overnight beforehand, or use your microwave for the job.

  • 15 mint leaves chopped

Instructions

  • Place a skillet over medium heat, add the ground beef and fish sauce. Stir fry it until fully cooked (for about 15 minutes).
